This overnight blueberry french toast is an easy, make-ahead breakfast that’s perfect for busy mornings or special occasions. For the French toast, you’ll need 12 slices of bread, cut into cubes (French or Texas toast); 1 (8-oz) package cream cheese, cut into cubes; 1 cup blueberries (fresh or frozen); 12 large eggs; ¾ cup maple syrup; 2 cups milk or cream; and 1 teaspoon vanilla. To prepare, arrange half of the bread cubes in a greased 9×13 pan, sprinkle the cream cheese cubes and blueberries evenly over the bread, then top with the remaining bread cubes. In a large bowl, mix together the eggs, maple syrup, milk or cream, and vanilla, then pour the mixture evenly over the bread, pressing gently so everything absorbs the liquid. Cover the pan with foil and refrigerate overnight. The next morning, bake covered at 350°F for 30 minutes, then uncover and bake for another 30 minutes until fluffy and golden.
